Ingredients

  • 2 eggs
  • 1 1/4 cups milk
  • 1 teaspoon vanilla
  • 3 tablespoons butter or vegetable oil
  • 1 1/2 cups all purpose flour
  • 3/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1 tablespoon sugar (optional)

Directions

Easy recipe to make pancakes from scratch.

Blend the eggs, milk and vanilla in a blender or food processor for about 3 minutes.

Mix dry ingredients together (flour, salt, baking powder,sugar) in a large bowl.

Gently fold in egg mixture and quickly (and gently) stir until completely mixed.

Let the batter rest while the griddle is heating (batter will thicken upon standing). Grease the preheated griddle and pour 1/4 cupfuls of batter on the lightly greased griddle.

Cook on one side until bubbles begin to form and break. Then turn the pancakes and cook on the other side until brown (turn only once).

That's a good point, I don't really know about the mixes that require you to add eggs and milk. Most of the ones I see are the 'just add water' kind, which definitely produce an inferior product.

Also I haven't tried maple syrup, but since Yotsuba interested me on pancakes I decided to look for it on local markets. I found only one place that sells the real stuff here. 113 US dollars a bottle!

Before I ever saw this bit, I once described Waffle House to someone as a "less classy IHOP" and they were astounded that there could be a place less classy than IHOP.
I had always thought IHOP was fairly nice though. It's a 5 star restaurant compared to Waffle House.

I'd hate to go to a place worse than IHOP or Denny's. But they're not terrible if you're hungry, and nothing else is open.

And did anybody see the lines around the block to get Denny's free grand slam a couple weeks ago?

I used bisquick because it's just so easy. Sure, home-made would be better, but you don't always have time for that, do you? You do have to add eggs and milk, but everything else is done for you (I can't imagine eating a pancake from a mix that only required water). Bisquick also makes a decent biscuit.

I'm not really a syrup kind of person, but sometimes I like it, and if I'm gonna have it, gotta have maple. My dad is a maple syrup fiend. That Kirkland stuff isn't bad, but the best syrup comes out of a little glass bottle, with a tiny little handle. (Everything is better out of glass than plastic.) Something like the picture there.

But I just gotta say, compared to home made waffles, pancakes suck. If I'm gonna go through the trouble of making a dough from scratch, I'm gonna make waffles.
